At the end of past January, Chef Bruce Kalman introduced his dish “Cider braised Jimenez Farms rabbit, beet greens, lemon pepper strozzapretti” on his menu at Union Pasadena, one of Los Angeles Magazine’s 2014 Best New Restaurants and also featured on Bravo’s TV’s new show Best New Restaurant.
Chef Kalman recalled, “At a restaurant in Chicago where I was the chef, I had a cider braised rabbit tortellini on the menu, so I drew inspiration from that dish for the rabbit, and through a collaborative effort with my new pasta maven, Merrin Mae, we came up with the lemon pepper strozzapretti. Turned out to be a wonderful dish.” For this dish, Jimenez Farms provided Kalman with the freshest, meatiest rabbits he has ever worked with. The lemon pepper strozzapretti is handmade and the entire dish is simply plated.
Chef Kalman concluded, “The dish showcases my passion for locally farmed ingredients and fresh, handmade cuisine.”
